Flaumige Pancakes

Super flaumige Pancakes, die der ganzen Familie schmecken, super vorzubereiten sind und außerdem noch glutenfrei sind. Das Reismehl bekommst du in jedem Bioladen. Reis stärkt die Mitte und leitet Feuchtigkeit und feuchte Hitze aus.

Portionen 4 Personen

Zutaten
  

  • 1 reife Banane
  • 2 Eier
  • 1/2 Tasse Mandelmilch
  • 2 TL Butter oder Kokosöl, geschmolzen
  • 1 Prise Vanillepulver
  • 1 Tasse Reismehl
  • 2 TL Backpulver
  • 1 Prise Zimt
  • 1 Prise Salz
  • Kokosöl

Anleitungen
 

  • Banane, Eier, Mandelmilch und das Kokosöl in einer Küchenmaschine kurz mixen.
  • Alle anderen Zutaten hinzufügen und zu einem Teig mixen.
  • Den Teig kurz rasten lassen.
  • In einer Pfanne etwas Öl heiß werden lassen und vier kleine Pancakes mit einem Löffel hineinsetzen.
  • Ca. drei Minuten backen, dann wenden und auf der anderen Seite auch nochmals drei Minuten backen.
  • Mit Obst der Saison garnieren und mit Ahornsirup süßen.
