Gulasch

Besonders in der kalten Jahreszeit wärmt ein Gulasch von Innen heraus. Ich achte immer auf gute Qualität und kaufe das Fleisch immer vom Biobauern im Nachbarort.
Die thermische Wirkung des Rindfleischs ist wärmend, es stärkt die Milz und baut Blut, Qi, Yin und Yang auf. Im Übermaß gegessen führt zu viel Fleisch zu Schleimbildung und innerer Hitze.

Portionen 4 Personen

Zutaten
  

  • 1 kg Zwiebeln
  • 1 kg Rindfleisch
  • 1 El Paprikapulver
  • 3 EL Butterschmalz
  • 2 Knoblauchzehen
  • 2 EL Tomatenmark
  • 1/2 L Wasser
  • 1 TL Kümmel
  • 1 TL Majoran
  • 1 Schuss Essig
  • Salz, Pfeffer

Anleitungen
 

  • Die Zwiebeln fein hacken und das Fleisch in mundgerechte Stücke schneiden.
  • Die Zwiebel im Butterschmalz glasig anrösten und dann das Rindfleisch hinzugeben.
  • Das Fleisch für ca. 10 Minuten gut durchrösten.
  • Dann alle Gewürze hinzufügen und den kleingehackten Knoblauch dazugeben.
  • Alles noch kurz durchrösten lassen und mit dem Wasser aufgießen.
  • Das Tomatenmark unterrühren und für ca. 2 Stunden auf kleiner Flamme köcheln lassen, bis das Fleisch weich ist.
  • Am Schluss kann man noch etwas Mehl mit Wasser vermischt hinzugeben, damit die Sauce sämiger wird.
