Frühstückskekse

Diese Frühstückskekse sind super für den Meal-Prep geeignet. Die Kekse passen in jede Jausenbox und sind praktisch für Büro und Schule.
Sie stecken voller guter Ingredienzien: Haferflocken wärmen und geben Kraft, Mandeln als Mus und Mehl versorgen dich mit der nötigen Portion Protein und halten dich lange satt. Und ein bisschen Gemüse ist auch versteckt - perfekt für Kinder, die Gemüse nicht so gerne mögen.

Zutaten
  

  • 1 reife Banane
  • 2 Eier
  • 1/4 Tasse Mandelmus
  • 1/4 Tasse Kokosöl oder Butter, geschmolzen
  • 1/4 Tasse Apfelmus
  • 1/4 Tasse Ahornsirup oder Honig
  • 1 3/4 Tasse Haferflocken
  • 1 Tasse Mandelmehl
  • 1/2 Tasse Hafermehl
  • 1/4 Tasse Kokosflocken
  • 1 TL Zimt
  • 1 TL Backpulver
  • 1 Prise Kardamom
  • 1 Prise Vanille
  • 1 Prise Salz
  • 1/2 Tasse Karotten, geraspelt
  • 1/2 Tasse Apfel, geraspelt
  • 1/2 Tasse Rosinen

Anleitungen
 

  • In einer Schüssel die Banane mit einer Gabel zerdrücken. Eier, Mandelmus, Kokosöl, Apfelmus, Ahornsirup dazugeben und verrühren.
  • In einem zweiten Topf die trockenen Zutaten vermischen und zu dem Bananen-Mix geben.
  • Zum Schluss Äpfel und Karotten zugeben und die Rosinen untermengen.
  • Ein Backblech mit Backpapier auslegen.
  • 12-14 Kugeln formen und flach drücken. Bei ca. 180 Grad für 20 bis 25 Minuten backen, bis die Kekse leicht braun sind.
  • Die Kekse auskühlen lassen und in einem Glasbehälter für bis zu 5 Tage aufbewahren.
