Spring rolls

Unglaublich leicht und gut sind die Spring rolls - nicht wie sonst üblich mit rohem Gemüse, sondern einfach gekocht. Passend dazu gibt es einen Erdnuss-Dip, der extra cremig ist und den Spring rolls einen asiatischen Touch verleiht. Einzig und allein der Zeitaufwand ist etwas länger bei diesem Rezept, aber es lohnt sich.

Zubereitungszeit 1 Stunde
Gericht Hauptgericht, Kleinigkeit

Zutaten
  

  • 3 Karotten in Stifte geschnitten
  • 2 rote Paprika in Stifte geschnitten
  • 1 Packung dünne Reisnudeln
  • 1 Avocado in Streifen geschnitten
  • 1 Packung Reisblätter
  • Salz und Pfeffer

Erdnussdip

  • 1/2 Tasse Erdnussmus cremig
  • 1/4 Tasse Wasser
  • 2 TL Tamari oder Sojasauche
  • 1/2 Zitrone ausgepresst
  • Salz und Pfeffer

Anleitungen
 

  • Das Gemüse bissfest kochen, die Avocado schneiden und die Reisnudeln nach Packungsangabe kochen.
  • Alle gekochten Zutaten bereit stellen.
  • Ein Brett mit einem feuchten Geschirrtuch bedecken.
  • Einen Suppenteller mit lauwarmem Wasser bereit stellen.
  • 1 Blatt Reispapier ins Wasser legen und 30 Sekunden warten.
  • Auf das Geschirrtuch legen, das Gemüse in die Mitte geben, salzen und pfeffern.
  • Die Seiten einschlagen und vorsichtig aufrollen. Mit allen Reisblättern so weitermachen, bis das ganze Gemüse aufgebraucht ist.
  • Für den Dip alle Zutaten verrühren und kühl stellen.
